Adding to the documentation @thadguidry gave, you can change the JAVA_HOME env variable in the script that starts an app, such as OpenRefine's "refine" script. That way, you don't need to manual switch versions each time you want to use an app that needs a particular version.
I had the same issue with the reconciliation service in 3.8.7 and also temporarily "solved" it by going back to 3.7.9. Hopefully the issue is solved in the next release...
