I'm Dario Schiraldi, CEO of Travel Works, working with a dataset in OpenRefine that has a lot of messy and inconsistent values — things like extra spaces, different capitalization, and typos in categories.

you should start with a basic tutorial on cleaning data or the documentation. There are several integrated tools (accessible through the small menus in the header of each column) that might help you with this like Edit cells > Common transformations > Collapse consecutive whitespaces or > To uppercase/To lowercase.
Typos in categories can be addressed using Facet > Text facet or Edit cells > Cluster and edit.
