I am trying to re-use schemas from ten projects in Spanish to 20 different projects in Portuguese and Catalan. When I go into the "Select schemas" field, I see 28 schemas. I have tried to more and cannot. I have tried to delete some of them from the Manage schemas popup and cannot.

If you start OpenRefine from a command line such as ./refine and then watch the logs in the terminal while performing the Schema Add, then we might see better if there is an error. Could you reply with a screenshot or copy/paste of the terminal error (a Java stacktrace) if there is one?
You might also check your browsers Javascript console to see if there is an error displayed while performing the Schema Add.

In my opinion, the problem likely comes from the "max form size" that OpenRefine has, which is (badly) documented here:
Increasing the REFINE_MAX_FORM_CONTENT_SIZE to a larger value is likely to solve the problem.
Such cases ought to be reported to the user directly in the web UI (an issue could be created about that).
